I’d like to think this is just a phase, quarter-life crisis maybe? Is it burnout? Stress? I really don’t know. It’s just that I haven’t felt this in a long time. When I was still in my previous job, I always looked forward to going to work. I loved what I did... Now? I can’t really say that, but if my life depended on it, fine.. I (gulp) love (gulp) my (gulp) job.
It’s a lot like love. No, not the movie, dummy.
Maybe you’re in the same situation as I am. What did you do? A friend said on Twitter to just “Let go.” There’s no point in staying if you’re not happy, right? Holding on to something that doesn’t give you the fulfillment you’re looking for is just futile.
So easy to say, but so hard to do.
Anyway, if you’re feeling a little blue, I have an antidote for you: a pop or two of these wonderful muffins would make you forget about the dreariness of Mondays.
The hint of citrus in the muffin just makes everything sunny and wonderful. The subtle taste of banana makes every bite perfect. It makes you forget that there’s a job waiting to be done and transports you back to sunny summers in the beach or the countryside. Ahh, that’s the life I want.
Can it be summer all year round? Even better, can we also go on summer breaks at work? How wonderful.
Banana Citrus Muffins with Coconut Flakes
1 ¼ cup all-purpose flour
1 ¼ tsp baking powder
½ cup granulated sugar
¼ cup unsalted butter, softened
1 tsp calamansi juice
1 tsp orange zest
1 egg, lightly beaten
90 ml milk
1/2 cup mashed ripe bananas
2-3 tbsp desiccated coconut
Preheat oven to 180 C. Line muffin cups with paper liners.
In a measuring cup, beat together calamansi juice, orange zest, egg, milk and bananas. Set aside.
In another bowl, whisk together flour, baking powder and sugar. Rub in softened butter. Add the milk mixture and whisk lightly until just combine.
Scoop batter into muffin cups up to 2/3 full. Bake for 25 minutes or until tester comes out clean. Cool on wire rack for 5-10 mins.

ReplyDeleteI love your addition of banana, must taste delish. As far as work goes, I think the "let go" advice is right on the money. I've had to do it twice in my life and both were very difficult (mostly because I suck at quitting:)) but in retrospect the actual letting go was much easier than the daily unhappiness that had become my life. Good luck whatever you decide:) oh and I really regret not baking these but am jumping on the Muffin bandwagon again next week:)

Most people hate Mondays, to me it's one of the best days of the week bc we get to make plans for the next days and its like a fresh new start. If those feelings don't go away I would suggest you try new things to be happy, life is too precious and short to start your week feeling like that!

Thanks, Yuri! :) I think you're right, it's time to try new things -- I actually did that on Tuesday! I went for a run and played badminton. It was fun and I'm no longer feeling that bad anymore :)
